Seafood Cacciatore

Oh my God, this is much better than it’s counterpart…the chicken.

Simple…different and amazing. You will love this dish.

1 lb Boston Codfish-cut into chunks

1/2 Cup white, all purpose flour

1 large onion-chopped

4 garlic cloves-chopped

1 large red pepper-chopped

1 large yellow pepper-chopped

3/4 Cup White Wine-Dry

3/4 Cup Chicken Broth-Low Sodium

1 (28 Ounce) Can Chopped Tomatoes

2 Tbsp Butter

1 Tsp Salt, 1 Tbsp Ground Black Pepper, 1 Tsp Onion Pepper,1 Tbsp Red Pepper Flakes

Coat the fish cubes with the salt and pepper then dredge in the flour. Set aside.

In a large pan heat the oil and butter over medium heat, and add the fish. Saute until brown for about 5 minutes on each side. Set aside when cooked.

Add onion, pepper and garlic and saute over medium low heat until tender.About 5 min.

Add white wine and simmer for about 5 min on high until it reduces by 1/3 then add the broth, red pepper flakes and tomatoes and simmer for 15 minutes then add the fish and simmer for another 10 minutes on medium heat.

Garnish with freshly chopped parsley and serve over a nice safferon rice or linguine.

This will serve about 4 people or 2 fat bastards.
