Slow Cooker Winter Tomato Sauce.

There’s nothing like it…nothing.

Coming home, opening your front door and before you say can a single word, you are hit with an amazing aroma. An aroma that can only penetrate the entire house from a slow cooker.

The smell that brings you back to childhood, the scent that unearths old memories of family gathered around the table and the aromas that make your mouth water.

There’s something about the Winter and the bone chilling weather that we, in NY, have had thus far this year.

It makes you want to slow down, it makes you want to hibernate, it makes you want to eat pasta and watch the Food Network all day long and it make’s me want to break out the Crock Pot and make comfort food all season long.

Being a New Yorker and growing up in a predominantly Italian neighborhood loaded with more Italian specialty stores, pizzerias, social clubs and cafe’s, I know a thing or two about sauce. Yes, SAUCE not GRAVY.

Me, I’m not Italian but most of my friends and relatives whom married into the family are.. so by that count,  I have been indoctrinated as an honorary Italian….without the ability to grow much facial hair or be allowed to own an Italian horn to hang from my rear view mirror.

I don’t always make sauce in the slow cooker but usually in the cold months I do. In the summer it’s usually a quick sauce or I take out some reserves that I have frozen just for the occasion.

Ingredients:

  • 3 tbsp olive oil
  • 1 medium onion, peeled and diced small
  • 3 cloves garlic, peeled and minced
  • 1 small onion, minced
  • 1 (24 oz) can chopped tomatoes
  • 1 tbsp tomato paste
  • 1/8 cup chopped fresh basil
  • 1 tsp dried oregano
  • salt and pepper
  • 2 tbsp parmigiano reggiano
  • 1 lb pasta of choice

The Cheese,  Onion, Garlic and Spices.

Ok, Let’s Get Started!

In a saute pan, heat up the olive oil and cook the garlic and onions until slightly translucent and put them in the slow cooker.

Add all of the other ingredients….close the lid…..set it for 8  hours and go out and have fun or go to sleep.

The Secret Flavor Enhancer

This tomato paste is double concentrated and adds a wonderful quality to your sauce. It also comes in a cool tube so you can tell your kids that you are squeezing tooth paste into the sauce.

Ok, scratch that part….that will most likely back fire on you when they squeeze Colgate in mom’s coffee.


The Final Product

This sauce is so simple and so damn good. I dare you to have a loaf of crusty Italian bread next to the slow cooker while your wife is home and think it’s going to be intact by the end of the day.

Final step….if you make it this far….Boil your pasta and enjoy with your new favorite sauce.
