Oven Roasted Tomatoes. A Quick and Simple Pleasure.

I love tomatoes. You name it……Salsa, fried green, sliced, sauce, juice, Bloody Mary’s.

Heck, I am so proud of the variety in my garden every summer that it always takes me back to when I was a kid.

My grandma would go outside with her apron and a salt shaker, pluck the ripest beefsteak tomato, wipe it off with her apron, shake some salt on it and eat it like an apple.

I remember the first time I saw this I thought it was odd, until she convinced me to try it. Reluctantly I did and damn…I was hooked.

Sweet, salty and juicy. I never looked back.
