Tonights Dinner Inspired by A NEED FOR CHANGE

Well, today is Election night Tuesday Nov 4, 2008. Obama vs. McCain. Seeing that we really need a change I thought that it was appropriate that tonight’s dinner was creative, exciting, different and not full of shit, false promises, lies and pork fat…I mean..fresh and healthy.

I decided to thaw out some shrimp in the freezer and take it from there. Chicken broth, shallots,onions, sundried tomatoes and spices made this meal a fresh change that was really needed. Low in fat too.

1/2 Cup of low sodium chicken broth

1 small shallot,diced (About 1 Tbsp.)

1/4 Cup Vadalia Onion (diced)

2 Sundried Tomatoes in Oil (About 2 Tbsp.)

1/4 Tsp Onion Powder

1/4 Tsp Sugar

1/4 Tsp Black Pepper

Salt to taste

Add all ingredients to sauce pan and simmer until onions are tender. (About 5 minutes)

Place 10-12 shrimp (if frozen, defrosted) in the pan, cover and continue to simmer for about 6 minutes, flipping shrimp after 3 minutes.

Shut off heat, take off burner and serve over fluffy white rice.

Coincidently, as I was surfing the net this evening after dinner I found a transcript between Michelle Obama and Democratic Presidential Nominee Interviewer, Maggie Rodriguez was told by Michelle Obama, “Oh, he loves my shrimp linguine. It’s garlicky, with sun-dried tomatoes. That’s one of his favorite dishes.”

I think it’s a sign! Obama loves shrimp and I made a dish tonight inspired by change and Obama. Is this prophecy? An omen? A Vision of things to come? A Revelation? Nah….I just had shrimp in the freezer that had to be cooked before they expired.
